Our Peru beans were grown by Jose Vasquez, a farmer in the Colasay District located in northern Peru. Coffee farms in Colasay are micro lots, between 1-3 hectares each, and are generally entirely family-run. The majority of farmers in this area cultivate 100% Bourbon coffee plants and are certified organic.
The coffee cherries are harvested and processed on-site in micro-mills, using a small pulper and a wooden or concrete fermentation tank. The cherries are dried naturally for 12-25 days, on a ground tarp or in a tent under shade, sometimes even just on a sheet outside the farmer’s house.
