Eat With Your Eyes | Menu Highlights 30.07 - 02.08
Summer fruits and veggies rule, and this week we're featuring them in all sorts of sweet and savory ways. Also, the veggie bowl is back! This time with a full summer veggie make over!
On this week's menu we've got several all-veggie dishes to keep things interesting and offer an alternative to traditional, meat-heavy summer dishes. We've got fresh, local, organic corn coming in from our friends at Zolle (forget that canned stuff!), our favorite raw, summer beetroots, and lots of fresh figs coming up to bat.
For the carnivores among us, we've got our Marigold chicken salad - paired simply with roast eggplant, chard and our signature lupin sauce - or tender, juicy, and satisfying roast beef with a house-made olive tapenade and fresh tomatoes.

It's the weekly pop-up burger joint that's not to be missed...and we've got just two weeks of it left! Beef Bollito with Salsa Verde, Fresh Onions and Tomatoes, Pickled Cucumbers, and Aioli with Horseradish
Our sandwich this week is going back to our beach-ready beef 'wich.
Thinly sliced organic beef bollito - the traditional way of boiling meat with vegetables to render the meat tender and juicy - and packed with fresh onions and tomatoes, Domenico's lightly pickled cucumbers on slices of Marigold sourdough bread. To hold it all together, there's some salsa verde, a super fresh sauce made from parsely, red onion, garlic and capers with good olive oil, and an addictive horseradish aioli.
When you order the sandwich for pick up or delivery, it's wrapped in paper to make eating it on the go a breeze. Stock the summer house this weekend with these sandwiches to keep the whole family happy.
*As always, the sandwich is served with a side bitter leaf salad and French vinaigrette.

Soup of the Day - Gazpacho with Avocado
What could make Domenico's tomato gazpacho even better? Well, avocado is a good start. This week he's blending some avocado into the classic chilled tomato soup, and swapping in lime juice for the vinegar used in the herb oil he tops the soup with. Aside from all those good fats the avocado adds, it also leaves the soup texture creamy and smooth.
Marigold pro tip: get a few of these soups delivered on Thursday, enjoy one for lunch and keep the rest in the fridge to cover you the whole weekend. The best part about chilled soups? Literally no prep required.
Our chicken salad is different. For starters, abandon the idea of some sticky mess held together with mayo. Domenico starts with organic chicken from our friends at Il Poggio which he pan fries and stacks it with other vegetables - this week, with roasted eggplant and chard.
We serve the chicken salad at room temperature this time of year. It's the perfect lunch or dinner that's ready at-the-go during a work break or on a lazy weekend.

Summer Veggie Bowl
Our veggie bowl is a lunch staple at Marigold, and we're bringing it back this week with a summer veggie makeover. Domenico starts with brown rice, quinoa, and chickpeas and adds grated raw summer beets and carrots, roasted cauliflower, fresh corn, and avocado. The veggie bowl is topped with seeds and nuts.
Marigold pro tip: Our veggie bowls are a filling, guilt-free meal that are perfect for a quick, easy lunch or dinner. They are enjoyed best with a few slices of Marigold sourdough and butter.
Burrata, Fresh Figs, Cantaloupe, Basil
Doesn't get simpler: creamy burrata with pieces of fresh, sweet figs, juicy cantaloupe melon and basil leaves. What else is there to say?
Braised Beetroots, Grilled Peaches, Smoked Cheese, Salsa Verde
This veggie dish was a big hit last week, so we decided to give it another week. A simple salad of braised beetroots with grilled peaches and Domenico's house-made smoked cheese, dressed with dollops of salsa verde. The dish is served at room temperature.
Green Beans, Grilled Apricots, Hazelnuts, Tahini
This week Domenico is taking the green beans to new heights with this variation on last week's salad. He's pairing the beans with lightly caramelized grilled apricots, chopped hazelnuts and nutty tahini dressing.
Fresh, Summer Corn, Borlotti Beans, Tomatoes, Bottarga
Rounding out the veggie dishes on this week's menu, Domenico wanted to highlight the local, organic corn we're getting from Zolle. The corn will be served off the cob with colorful borlotti beans, fresh tomatoes and shavings of bottarga.
Roast Beef, Tomatoes, Olives
Juicy, tender organic beef from the Val d'Orcia in Tuscany, thinly sliced with a house-made olive tapenade made al coltello and fresh tomatoes. We serve the dish at room temperature, and it's the perfect meal to enjoy al fresco - either at one of our outdoor tables or on your own terrace, at the beach or in the park.
Marigold pro tip: order a few portions for pick-up before you head out of town on Friday so when you reach your destination, dinner is already served!
** don't forget! You can always order Domenico's hummus (made from fresh chickpeas and tahini) and babaganoush (made from roasted eggplants) for delivery and take away. They make the best spreads for lunches, aperitivo and entertaining!

Plum Crumble Tart
The plum crumble tart is having another moment this week after Sofie was able to get several beautiful and juicy plums. The tarts are made in her own delicately buttery tart shells and topped with an addictive rye crumble before they're baked. The tarts are served with house-made créme fraîche that binds the sweet, buttery, and tart flavors together.
Ice Cream Sandwich*
We debuted last week's sandwich (cookie dough ice cream between two dark syrup snap cookies), and, well, needless to say it was a massive hit. We made more than we usually do, and we still ran out on Burger + Beats. So it's coming back for an encore this week!
But next week we are changing the ice cream sandwiches again, so if you didn't get one last week you'll want to make sure you try it this week!
